Filigreen Farm Pinot Gris 2016

Filigreen Farm Pinot Gris 2016

With chilly winter weather on the way, it is the perfect time to discover a fuller, richer white wine. With it’s beautiful notes of apple, pear, and stone fruit, Pinot Gris offers a rich, round mouthfeel, and just may be your new favorite winter white.

Whole clusters were loaded into our basket press and foot crushed to break the skins and begin the flavor extraction as we slowly pressed the juice out of the grapes. After settling in tank for 48 hours we moved the wine, using gravity into a mix large (135 gallon) neutral oak barrels and stainless, then we suspended grape skins in the tank until fermentation began and then allowed the wine to age through the winter. In spring, after malolactic fermentation had completed, we racked the wine back into tank, where the parts melded into a harmonious whole. We bottled, using gravity (and Nick’s sister and brother-in-law)
